
I always find myself craving something punchy and comforting after a long day. This spicy tofu dish has become a total staple in our house because it is quick to pull together but still feels like a proper treat. Andreea and I usually make this when we want a big bowl of Chinese style comfort food wβ¦
Toss the cubed tofu in corn starch until evenly coated. Heat oil in a frying pan and cook the tofu until golden and crispy. Remove from the pan and set aside.
π‘ Make sure the pan is hot before adding the tofu so it does not stick.
In a small bowl, whisk together the soy sauces, sugar, corn starch, Sriracha, vegan fish sauce, rice wine vinegar, mirin, pepper, garlic granules, and water.
π‘ Double check that the corn starch is fully dissolved so you do not get lumps.
Add a little more oil to the pan and sautΓ© the onions and bell peppers until they start to soften.
π‘ Keep the veggies crunchy by not overcooking them at this stage.
Add the tofu back into the pan along with the fresh garlic. Cook for a minute until the garlic is fragrant.
π‘ Be careful not to burn the garlic.
Pour the sauce mixture over the ingredients and toss everything together. Cook until the sauce thickens and coats everything nicely.
π‘ Serve immediately over a warm bowl of rice.
