Ingredients

2 tinsblack beansdrained and rinsed
1 tinkidney beansdrained and rinsed
2 wholered onionsfinely chopped
6 clovesgarlicroughly chopped
8 piecestortillasmedium or small size
0.5 fruitlimejuiced
3 tbsptomato pasteheaped
3 tbspsoy sauceadds a deep savory note
2 tbspmaple syrupfor a hint of sweetness
2 tbspoilfor frying
1 tbspapple cider vinegaradds brightness
1 tspsmoked paprikaheaped
1 tspsweet paprikaheaped
1 tspground corianderheaped
1 tspground cuminheaped
1 tspsaltadjust to taste
1 tspbrown sugarpacked
1 tspchili powderoptional for heat
0.5 tspblack pepperfreshly ground

Mix all your spices and the brown sugar together in a small bowl and set it aside for later.

In a separate bowl, whisk together the tomato paste, soy sauce, maple syrup, apple cider vinegar, and a splash of water.

Heat the oil in a pan over medium heat. Add the red onions and fry them until they are soft, then stir in the garlic for about 2 to 3 minutes.
