Ingredients

3 canschickpeasdrained and rinsed
500 mlhot waterfor the sauce base
2 largered onionsthinly sliced
1 handfulfresh corianderchopped
1 wholelimejuiced
1 mediumchili pepperfinely chopped
1 largebay leafripped in half
2 tbspneutral oilfor frying
2 tbsptomato pureeheaped
2 tbspsoy sauceadds a nice depth of umami
2 tspgarlic-ginger pasteor 1 tsp each of chopped garlic and ginger
2 tspbrown sugarto balance the acidity
1 tspcumin seedstoasted
1 tspground turmericbrightens the color
1 tspground corianderstandard spice
1 tspgarlic powderor granules
1 tspKashmiri Red Chili Powdersubstitute hot paprika if needed
1 tspground black pepperfreshly ground
1 tspgaram masalaadded at the end
0.5 tspcoriander seedsadds texture
0.5 tspground cuminearthy flavor
0.5 tspsaltadjust to your preference

Method

In a pan heat the oil with the cumin seeds, coriander seeds and bay leaf.

As the seeds start to release their aromas, add the turmeric and the onion, stir through.

Once the onion has softened add the ginger-garlic paste, chopped chili and all spices except the garam masala, stir to combine.

Add the tomato paste, stir through, then add the chickpeas until they are all coated in the mixture.

Add the water, soy sauce and brown sugar, stir then bring to a simmer and cook for 25-35 minutes until most of the water is gone, stirring frequently.

Add the lime juice, garam masala and fresh coriander and stir through, adjust seasoning to taste and serve.
